It sounds like you are not using JOSM?

JOSM is currently the more powerful of the editing tools available and
supports fully various methods of tagging.

For bthe tagging itself head over to
http://wiki.openstreetmap.org/index.php/Map_features
for a whole host of suggested tagging keys and values.

You might alos like to join in one of the IRC tips and tricks sessions where
you can ask lots more questions like these. The next one is on 13 Feb.
