So what? This has nothing to do with GPS, collecting data. It's merely
about representing that data (which is collected from the surface of an
approximate spheroid) as a flat map.

Put it another way: if someone was to make a web site with something
like a Peters projection, or a Buckminster Fullerine projection or any
of the other weird and wonderful projections that exist, would that be
any more / less "consistent" with our GPSes? Why would it matter?

Are you trying to say that there is a standard for tiling in Mercator
projection written down somewhere, and we are breaking it? If so, can
you reference it, and I'll immediately join the other side of this
argument! The most important thing here is that all the layers are the
same. Currently they aren't.
