IMHO, a good setting would be "record a new point whenever the heading has 
changed by three degrees or more". Long straight roads would be skipped 
altogether, and bendy roads would be detailed.

Of course, you can play with setting different intervals depending on the 
heading variation, e.g.:

More than 10 degrees/second: one point every second
More than 5 degrees/second: one point every two seconds
More than 2 degrees/second: one point every ten seconds
Otherwise, one point every 60 seconds
