It is pretty easy to create new rendering rules for Osmarender. For
tiles at home there is an osmarender xml rule file for each zoom level, and
there is some documentation about the format on the wiki:

If you install the t at h client you can then edit the rules file locally and
view the results without needing to upload to the t at h server. It's not too
difficult.
If you want something to be rendered on the map then the best option is to
devise a patch to the rules file and then find someone with svn rights to
commit it. There are several people who perform updates to the t at h rules
files and these would be the best people to contact as they are best
qualified to review your changes.
While both of the features you are concerned about are worthy of being
rendered, people should not expect that every tag that gets a vote of
approval will automatically get rendered one day. If absolutely everything
were to be rendered then the map would become very cluttered and that would
not be very appealing.
As time goes on I would expect there to be more specialist maps appearing.
There's already one for cycle routes and I can imagine that there will be
one that focuses on canals and waterways sooner or later, and another for
public transport etc.
There is also, at the moment, some experimentation with using layers for
place names in different languages. I can imagine that feature layers would
also be a possibility, enabling a greater variety of POIs to be shown.
So get stuck in and propose some patches. I look forward to seeing
subterranean waterways and living streets being rendered on t at h sometime
soon.
