Hi Greg, maybe I can help....

There are areas for MSF that come to mind at the moment, two in DRC;
Lubumbashi and South Kivu, and one in Unity State, South Sudan. All have
plenty to do at the current time....

Lubumbashi is pure building mapping and great for beginners:
http://tasks.hotosm.org/project/1254 There is a description on this, but no
tracing guide.
Unity State is also just buildings, but in rural areas:
http://tasks.hotosm.org/project/1053 This has a nice tracing guide linked
from the instructions tab.

South Kivu is slightly more complex as it is mapping road networks and
residential areas. There are several tasks on the go for this:

These are good as they have a video that sets context linked in the
description tab and tracing guides linked in the instructions tab.
