I stopped using *ways as values and only use path with
bicycle/foot/horse=(official/)designated/yes/no.

everything else goes to extra tags:

mtb:scale=*
sac_scale=*
uiaa_scale=*
smoothness=*
surface=*
width=*
barrier=*
obstacle=*
