I think you need food_court={a,b,c,d,e} where a..e are the dimensions you gave. Maybe allow for more dimensions in the matrix: {a,b,c,d,e[…]}
You could define a...oo to take the form of attribute=value pairs, in which case the order of the dimensions does not need to be fixed. You might need a mechanism to increase the allowed length...
