Yes, CAI (acronym for "Club Alpino Italiano") is the main italian mountain hiking organization. It publishes books, you can browse the list [1] on their web site. For Toscany you might want to see also the regional section website [3], the map of the trail (sentieri) and alpine hut (rifugi) network [4], the list of alpine huts [5], and the list of local sections [6].

Usually they are signed. The standard symbol used by CAI is red and white, for general information read more on this [7] page in the section "segnaletica" (italian only, but there are plenty of pictures of what you might expect).
