For the Seine river on Paris, I used a series of natural=water areas :

My areas are a bit small I think... It's not optimal, but you can't make 
a single area for the whole river.

You can look on the above link how area are connected. This way, there 
is a little overlapping surface, each way is "linear" (all segment in 
the same direction) and it's easy to merge two area as one.

It display good with osmarender but not in mapnick because area borders 
are shown...


This is an acceptable method for good-looking map, but not for 
navigation use...
