A GPS track usually has much too dense data, so you want to manually
place some nodes, but at intervals further apart. for example you don't
need more than 2 nodes for a straight road (if no junctions are there)
however for nice curves you need to place the nodes more densely.

you might want to check other areas that have been mapped already and
download the GPX data there, too with JOSM, so you can see how it is
intended.
